Ingredients

  • 2 green onion
  • 150g wheat noodles
  • 3 tbsp soy sauce
  • 1 tbsp lard
  • water
  • stock (optional)

Method

  1. Finely chop the green part of the green onion and set aside. Cut the white parts into thumb long pieces.
  2. Add the white green onions to a pan or wok with 1 tbsp lard and fry on low/medium until golden.
  3. Add 3 tbsp soy sauce to the pan and fry for 30 seconds. Add 1 cup of water (or optionally stock). Boil for a few minutes. In a separate pot, boil a few cups of water and set aside.
  4. Cook the noodles in a separate pot and drain. Transfer the noodles in bowls, add the chopped green onions, then pour the contents of the pan into each bowl while using a strainer. Using the reserved boiled water, pour until you reach desired serving size, consistent with desired richness.
