Ingredients
- 2 green onion
- 150g wheat noodles
- 3 tbsp soy sauce
- 1 tbsp lard
- water
- stock (optional)
Method
- Finely chop the green part of the green onion and set aside. Cut the white parts into thumb long pieces.
- Add the white green onions to a pan or wok with 1 tbsp lard and fry on low/medium until golden.
- Add 3 tbsp soy sauce to the pan and fry for 30 seconds. Add 1 cup of water (or optionally stock). Boil for a few minutes. In a separate pot, boil a few cups of water and set aside.
- Cook the noodles in a separate pot and drain. Transfer the noodles in bowls, add the chopped green onions, then pour the contents of the pan into each bowl while using a strainer. Using the reserved boiled water, pour until you reach desired serving size, consistent with desired richness.
