Ingredients
- 4 breakfast sausage
- 1 + 4 eggs
- 125g flour
- ½ tsp salt
- 3g baking powder
- 1g dry yeast
- ½ tsp pepper
- ½ tbsp maple syrup
- 210g water
Method
- Make the dough/pancake batter by whisking together the flour, salt, baking powder, yeast, pepper, maple syrup and water until smooth
- Crack 4 eggs into an oiled 4-hole pan. Break the yolks and fry for 30 seconds
- Place a breakfast sausage on top of each egg and fry until sides of egg are cooked and lifting
- Flip them sausage-side down and fry for 1 minute. If the breakfast sausage is frozen, fry for a few minutes.
- Set them aside and pour half of the batter evenly into all 4 circles. Place them back on top of the batter and cook for 1 minute
- Set aside again and pour the remaining batter evenly into all 4 circles. Place the non-battered side on top of the batter and cook for another minute
- Flip until both sides are browned.
