Ingredients

  • 4 breakfast sausage
  • 1 + 4 eggs
  • 125g flour
  • ½ tsp salt
  • 3g baking powder
  • 1g dry yeast
  • ½ tsp pepper
  • ½ tbsp maple syrup
  • 210g water

Method

  1. Make the dough/pancake batter by whisking together the flour, salt, baking powder, yeast, pepper, maple syrup and water until smooth
  2. Crack 4 eggs into an oiled 4-hole pan. Break the yolks and fry for 30 seconds
  3. Place a breakfast sausage on top of each egg and fry until sides of egg are cooked and lifting
  4. Flip them sausage-side down and fry for 1 minute. If the breakfast sausage is frozen, fry for a few minutes.
  5. Set them aside and pour half of the batter evenly into all 4 circles. Place them back on top of the batter and cook for 1 minute
  6. Set aside again and pour the remaining batter evenly into all 4 circles. Place the non-battered side on top of the batter and cook for another minute
  7. Flip until both sides are browned.
