Ingredients

  • 250g all-purpose flour + 2 tbsp flour
  • ½ tsp salt + ½ tsp salt
  • ⅓ cup chopped scallions
  • 160ml boiling water
  • ¼ tsp 5 spice powder
  • 2 tbsp lard
  • oil for frying

Method

  1. In a bowl, combine the salt and flour, then pour the boiling water and stir until roughly combined
  2. Knead lightly and let rest for 10 minutes
  3. Knead again until smooth and brush with some oil. Roll into a thin rectangle
  4. Prepare the roux: combine 2 tbsp flour, ½ tsp salt, 5 spice powder and pour scalding lard. Mix until smooth
  5. Spread the roux all over the dough in an even layer. Sprinkle the scallions on top and roll up loose
  6. Cut into 4 pieces. Take a piece, stand it up straight, and press down flat on it. Flatten further with a rolling pin. Repeat with the others
  7. Heat oil in a pan and fry the pancakes with a lid until browned. Flip and cover again until both sides are brown.
