Ingredients
- 250g all-purpose flour + 2 tbsp flour
- ½ tsp salt + ½ tsp salt
- ⅓ cup chopped scallions
- 160ml boiling water
- ¼ tsp 5 spice powder
- 2 tbsp lard
- oil for frying
Method
- In a bowl, combine the salt and flour, then pour the boiling water and stir until roughly combined
- Knead lightly and let rest for 10 minutes
- Knead again until smooth and brush with some oil. Roll into a thin rectangle
- Prepare the roux: combine 2 tbsp flour, ½ tsp salt, 5 spice powder and pour scalding lard. Mix until smooth
- Spread the roux all over the dough in an even layer. Sprinkle the scallions on top and roll up loose
- Cut into 4 pieces. Take a piece, stand it up straight, and press down flat on it. Flatten further with a rolling pin. Repeat with the others
- Heat oil in a pan and fry the pancakes with a lid until browned. Flip and cover again until both sides are brown.
