Ingredients

  • 6 whole star anise pods
  • 1 ½ tsp whole cloves or 1 ¼ tsp ground
  • 1 cinnamon stick (7cm long) or 2 tbsp ground
  • 2 tbsp fennel seeds
  • 2 tsp Sichuan peppercorn OR 1 tsp white peppercorn, 1 tsp black peppercorn, 3 dried chili

Method

  1. Toast all dry whole spices until fragrant, ~3 minutes
  2. Blend in spice/coffee grinder until smooth
  3. (Optionally) sift the blend before storing to remove any ungrinded pieces or seeds.
