Ingredients
- 6 whole star anise pods
- 1 ½ tsp whole cloves or 1 ¼ tsp ground
- 1 cinnamon stick (7cm long) or 2 tbsp ground
- 2 tbsp fennel seeds
- 2 tsp Sichuan peppercorn OR 1 tsp white peppercorn, 1 tsp black peppercorn, 3 dried chili
Method
- Toast all dry whole spices until fragrant, ~3 minutes
- Blend in spice/coffee grinder until smooth
- (Optionally) sift the blend before storing to remove any ungrinded pieces or seeds.
