Ingredients

  • 400g fresh okra
  • 1 onion, diced
  • 4 cloves garlic
  • 1 green pepper, sweet or spicy
  • 1 tsp allspice
  • ½ tsp coriander
  • 1 tbsp paprika
  • 4 roma tomatoes, shredded
  • 1 roma tomato sliced into circles
  • ¼ - ½ cup water
  • salt and pepper to taste
  • olive oil
  • ½ lime

Method

  1. Wash the okra in a vessel with water, then wash with water and baking soda, then with plain water again. The okra should not be so prickly now. Cut the okra into small pieces and dice the rest of the vegetables.
  2. In a large skillet, sauté the onions and pepper until softened in olive oil. Add minced garlic and sauté for 2 more minutes.
  3. Add the okra and cook for 5 minutes, then season with salt, pepper and spices.
  4. Incorporate the tomatoes, then the water. Add the sliced tomatoes on top. Cover with a lid if the skillet has one or cover with baking paper, letting some steam to escape. Bring to a simmer and cook for 20 minutes or until the okra is softened but still has some crunch and is not slimy. Add the lime juice and serve.
