Ingredients

  • 500g gnocchi
  • ½ lemon
  • ground black pepper
  • 20g fresh sage or 1 tsp ground sage
  • 3 tbsp butter
  • parmesan to taste

Method

  1. Cook the gnocchi in salted water until slightly undercooked
  2. Melt butter in a pan, add sage and pepper and stir until butter is melted and starting to brown
  3. When the butter turns caramel coloured, add some of the gnocchi water and stir to emulsify the sauce
  4. Add the gnocchi in the pan with more gnocchi water and stir until the sauce becomes creamy
  5. Remove sage (if using fresh sage) and squeeze lemon juice. Grate parmesan and more black pepper to taste.
