Ingredients

  • 1 cup mirepoix
  • 250g white kidney beans
  • 300g bacon, cut into batons
  • 1 tbsp vegeta or other stock cube
  • salt and pepper to taste
  • 2 tbsp paprika

Method

  1. Soak beans in water for a minimum of 8 hours, preferably more
  2. Drain the beans and in a Dutch oven or large pot, boil the beans on high for 15 minutes. Drain and set aside.
  3. In the same cookware, cook the bacon until browned and fat has rendered
  4. Add the mirepoix and sauté until softened. Add the beans and fill up with enough water to cover everything. Add vegeta, salt, pepper, and paprika. Simmer or boil on low for 2 hours, up to 4 hours.

Tip

Pairs well with corn bread, pickles, and a refreshing, tangy salad.
