Ingredients

  • 250g pastry flour or all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ tsp ground cinnamon
  • 113g butter
  • 75g brown sugar
  • 75g white sugar
  • 2 eggs
  • 80g sour cream
  • 4 over ripe mashed bananas
  • 100g poppy seeds
  • 1 tsp vanilla
  • 100g chopped walnuts

Method

  1. Preheat oven to 180°C. Line a loaf pan with baking paper
  2. Mix the flour, baking soda, salt, and cinnamon together and set aside
  3. Beat the butter and sugar until smooth and creamy. Add the eggs one at a time, then in order the sour cream, mashed bananas, and vanilla extract until combined
  4. Fold the dry ingredients into the wet ingredients, careful not to over mix. Fold in half of the nuts.
  5. Pour batter into loaf pan and bake for 40-60 minutes, cover top if needed to prevent too much browning.
  6. Allow to cool in the pan for 1 hour, remove and slice.
